protein balls! 

End of midterm

Lunchbox dilemas start!! 

This one is a great on the go snack!! 

Im on a clean eating challenge of 30 days, and am sharing my daily foodplan here 

This is the recipe for protein balls…  Dont forget to follow my clean eating food plan! 

 1 cup almonds

1 cup plant-based protein powder (I used Juice Plus Complete )

1/4 cup cacao powder

2 tbsp coconut oil, melted

5 tbsp honey or maple syrup

2 tsp pure vanilla extract

1/2cup unsweetened coconut flakes

2 tsp Chia seeds

Coconut flakes for coating
For variations you could add goji berries and pistachios
Directions

In a food processor, add almonds, protein powder, cacao powder, and process until fine powder forms.In a small bowl, stir together coconut oil, honey, vanilla, and add to a food processor. Process until smooth dough forms, stopping and scraping the walls of a food processor. It took me about 3-5 minutes and my food processor needed a few breaks. Then add coconut flakes, process until combined, 1-2 minutes.Place some coconut flakes on a plate, scoop small ball size amounts of dough, roll with your hands into a ball and coat in the flakes. Repeat until you run out of dough.
Storage Instructions & Serving Suggestion: Refrigerate in an airtight container for up to 2 weeks. You could also freeze the balls for up to 3 months.
