Lunch box challenge day 2

So …. Day 2 was typically similar to day 1 ……

Reason being, it was handy to use the same food as it was in stock in the kitchen, and my kids don’t mind having same thing 2 days in a row!

So I used the extra time to tweak a few snack recipes I want to make for other days, and got kids to taste them to make sure they liked them!

Smoothie

First I tried strawberry, pineapple and coconut milk with orange juice ….. This was way to creamy and strong coconut flavor got the boo!!! from kids

So same combo without coconut milk and a scoop of chocolate veggie protein to thicken ( juiceplus+ complete with added fruit and veg) and water.

….. Or a creamy one with milk banana and mango strawberry combo! * be sure to pack a straw and make the night before so they leave the fridge in the morning  and will be still chilled by the time first break arrives.

this is the coconut one that was turned away … great if there is time to test out new ideas and recipes before they make it to school lunch boxes!

Cheesy bites

Double hit here with these!! The sesame seeds being a great source of calcium, added with the cheese, they are tasty and will be gone in a shot!

Grate a milder cheese in piles onto a baking tray. Add a scoop of sesame seeds on top of each and bake in the oven for about 8 minutes, or until they are melted through and starting to crisp.

the grease from yhe cheese is left behind on the tray leaving crispy cheese bites!

Take the tray out of the oven and allow to cool. Then pack into an airtight container until ready to eat!


So day 3 tomorrow …. Smoothies and savouries !!!!

……. And the great news being a cost of 60c or less  per lunch box! ( try do that with fruit shoots, frubes and cheese strings!!!) *nothing wrong with the odd cheese string!
