Tbls lentils

Tbls quinoa

1 Shallot

1 Carrot

1/4 Pepper

2 Mushrooms

1/2 veg stock

3 tbls passata (sieved tomatoes)

1/2 cup water

1 or 2 Potato 

1or 2 Sweet potatoe

Peel and boil or steam potato and sweet potato

In a saucepan with a little rapeseed oil heat the veg until they turn pale in color

Add lentils and quinoa and heat for extra few minutes, then add stock and water

After about 7/8 minutes, or when lentils and quinoa soften add passata and continue to simmer for another 8 minutes. Add water if need be.

Pour the mix into a Pyrex or oven dish.

Mash the cooked potato with a knob of butter and scoop over the lentil mix

Use the back of a spoon to evenly spread it over the top, then design your heart on top with a fork if you like!

Serve with baked beans or green broad beans.
